Fresh Ricotta, Basil & Strawberry Sandwich

This April, celebrate fresh starts with one of our favorite signs of Spring- fresh ricotta.

Hints of sweetness layered into the creamy cow’s milk cheese make a perfect light snack or complete lunch inside this sweet and tangy, spring sandwich.  There’s nothing better than biting into fresh in-season strawberries, wrapped in cheese and sweetened with local honey.

What You Need (And How Much):

  • Ricotta Cheese, Fresh –  1 Cup
  • Cinnamon, Ground – 1/2 Tsp
  • Fresh Strawberries, Sliced – 1/2 Cup
  • Honey – For Drizzling
  • Raisin Nut Loaf – 1 Loaf, Sliced
  • Basil, Fresh, Chopped – 1/2 Cup

How it’s Made

Mix cinnamon with ricotta cheese. On sliced bread, spread about ¼ cup fresh ricotta cheese mixture.  Top with berries and fresh basil. Drizzle with honey. Serve open faced, or top with an additional slice of bread for a delicious sandwich.  Serves 4.
